Salmon , Grilled with Lemon Relish

- 1/2 thin-skinned lemon
- 1/4 cup fresh Italian parsley
- 2 cloves garlic
- 1 TB olive oil
- salt and pepper
- 4 6oz salmon fillets with skin on

Preheat grill to medium-hot. To check grill temperature, count the seconds you can hold your hand, palm side down, 2-3 inches above the rack, until it feels uncomfortable: 3 seconds for medium-hot.
Cut lemon into fourths and remove seeds. (If lemon has a thick peel, just cut the rind off the lemon in large strips, then cut off and discard most of the white pith on the strips.) Place lemon in a food processor along with parsley, garlic, olive oil, salt and pepper. Pulse until mixture looks finely minced.
Season salmon with salt and pepper. Spread lemon relish evenly over the flesh. Place salmon on the grill skin side down. Cover the grill and cook until the salmon is opaque throughout and flakes easily, about 10 minutes. Slide spatula between the flesh and the skin to lift the fillets off the grill and leave the skin behind (it will cook away.) Serve immediately.
