Ingredients
- 4 bone-in rib chops
- Salt & pepper
- All-purpose flour for dredging
- 2 T olive oil
- 1 T butter
- 4 large shallots, sliced
- 1/4 t anise seeds
- 1/2 C dry red wine
- 1 C chicken stock
- 1 t minced garlic
- 2 t tomato paste

Preparation
Step 1
Preheat oven to 400. Season pork chops with salt & pepper & dust with flour. In skillet, heat oil til shimmering. Add pork & cook over hi heat for 1 min. Add butter, reduce heat to mod hi & cook, turning once, til chops are brown on both sides, 8 min. Transfer to baking sheet & bake in oven til thermometer registers 145, @ 7 min.
Meanwhile, add shllots & anise to skillet & cook over lo heat, stirring, til softened, @ 8 min. Add wine & reduce over mod hi heat to 1/4C, @ 2 min. Add stock & reduce by half, @ 5 min. Stir in garlic & tomato paste & cook for 1 min longer. Season with salt & pepper. Transfer to platter & top with sauce.
