- 1 tbs butter
- 1 very large onion, thinly sliced
- 1 tbs Balsamic vinegar
- 2 tsp honey
- Salt and freshly ground pepper to taste
- 4 4oz to 6 oz salmon fillets

Step 1
1. Preheat oven to 400 degrees and spray a baking sheet with non-stick cooking spray.
2. Melt butter in a large skillet. Separate onion rings and add to skillet. Cook over med heat for 10 minutes, stirring frequently. Reduce heat to low and cook for 10 minutes more. Stir in vinegar and honey, then season with salt and pepper.
3. While onions are cooking, rinse salmon and place on prepared baking sheet; sprinkle with salt and pepper. Bake for 10-20 minutes or until salmon is cooked to your liking; top with onions.
