Egg Noodles (Homemade)

  • 2 Cups Flour
  • 1/4 tsp. Salt
  • 2 Medium Eggs
  • 1/4 Cup Water

Step 1

In a large bowl, combine flour and salt. Make a well (hole) in the center of flour. Then crack the eggs into well. Using your hands or large spoon, mash the eggs and flour together making a coarse and crumbly mixture. Add the water. Mix again until you have a nice stiff dough. Knead dough 5-10 minutes to get it nice and smooth. You may need to dust it with flour a few times so it doesn't stick to your hands. Cover dough with a clean t-towel and let it rest for about 20 minutes. This is to relax the gluten and make it easier to roll out. Using a rolling pin and floured surface, roll out the dough real thin. The noodles will poof out while they cook. Cut into strips and let rest and dry for 20-30 minutes. Put in boiling water or broth and then reduce to simmer for 25-30 minutes.
