Ingredients
- 5 cups chopped rhubarb/1 cup sugar
- 2 cups flour
- 2 cups sugar
- 2 eggs
- 1 tsp. salt
- 1 tsp. baking powder
- 1/2 cup butter

Preparation
Step 1
1. Toss the rhubarb with 1 cup of sugar and place this mixture in the bottom of a 9 by 13 inch pan.
2. Whisk together the flour, sugar, salt, and baking powder.
3. Add the 2 eggs and lightly mix. Mixture may be rather dry and lumpy.
4. Spoon over the fruit mixture, trying to evenly distribute the topping.
5. Melt the butter and pour it over the topping.
6. Bake in a 350 degree oven until brown and bubbly (45 minutes to 1 hour depending on your oven).
7. TIP-Wrap a cookie sheet in foil and place your pan on top of this. Depending on the moisture in the rhubarb, the crisp may boil over a bit.
