Ingredients
- 1 1/2 cups dried black beans
- 1 cup chopped yellow onion
- 1/2 lb chopped red potatoes
- 1 cup salsa
- 2 cloves minced garlic
- 1/2 tsp sea salt
- 1/8 tsp black pepper
- 6 Tbsp shredded four cheese blend
- 6 Tbsp low fat plain yogurt (optional)
- 6 Tbsp chopped cilantro

Step 1
Rinse the beans and soak overnight. In the morning, put the beans in a slow cooker with 5 cups water, onion, potatoes, salsa,and garlic. Cover and cook on low 8 hours. Season with salt and pepper. Serve with cheese, yogurt, and cilantro.
