Ingredients
- 1 c flour
- 1 c corn meal
- 1/4 c sugar
- 2 1/2 tsp baking powder
- 3/4 tsp salt
- 1/2 tsp baking soda
- 1 egg
- 1 egg yolk
- 1 1/4 c buttermilk
- 1/3 c canola oil
- 3/4 c corn

Preparation
Step 1
n a large bowl, combine the first six ingredients. In another bowl, whisk the egg, egg yolk, buttermilk and oil. Stir into dry ingredients just until moistened. Fold in corn.
Fill greases muffin cups three fourths full. Bake at 400° for 18-23 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
