Ingredients
- 1/2 cup olive oil
- 4 whole yellow onion, diced
- 4 whole garlic clove, minced
- 10 basil leaves, thinly sliced
- 1 tablespoon oregano
- 1/2 cup parsley, chopped
- 1 whole eggplant, sliced 1/8" thick
- 5 whole tomato, sliced 1/4" thick
- 4 whole zucchini, sliced crosswise
- 1/2 cup Parmesan cheese

Preparation
Step 1
1. Preheat oven to 425
2. Saute onions, salt and pepper; about 10 minutes.
3. Add garlic, basil, oregano and parsley 2 more minutes
4. Place eggplant, then onion mix, tomatoe, then onion, then zucchini. Drizzle with olive
5. Bake 40 minutes then sprinkle with chesse bake another 7-10 minutes
