  • 1/2 cup olive oil
  • 4 whole yellow onion, diced
  • 4 whole garlic clove, minced
  • 10 basil leaves, thinly sliced
  • 1 tablespoon oregano
  • 1/2 cup parsley, chopped
  • 1 whole eggplant, sliced 1/8" thick
  • 5 whole tomato, sliced 1/4" thick
  • 4 whole zucchini, sliced crosswise
  • 1/2 cup Parmesan cheese
