Peppered Tomato Sauce

Ingredients

  • 3 or 4 large fresh tomatoes (about 1 1/2 to 2 pounds)
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 cup chopped onion
  • 1 chopped garlic clove
  • 2 fresh jalapenos, seeded and diced
  • 1 serrano or hot yellow chile, seeded and diced
  • 1/3 cup fresh lime juice
  • 1/2 cup chicken stock
  • 1/2 tsp salt
  • a few twists ground pepper
  • 1/4 tsp hot pepper sauce
  • 1/4 tsp chili powder
  • 1 tbsp chopped cilantro

Step 1

1. Place washed tomatoes in broiler pan set on rack 5 to 6 inches from heat and broil 5 minutes. Turn over and broil another 2 to 3 minutes. Remove, cool slightly, core, peel and place in food processor.

2. Use a large skilled to combine olive oil and butter; saute onion and garlic until soft. Transfer to process and puree with tomatoes. Return to skilled. Add the diced chiles (about 1/4 cup in total), lime juice, chicken stock and rest of ingredients. Bring to a boil, reduce heat and simmer 30 minutes. Keep refrigerated.

3. Makes 4 cups.
