Ingredients
- 3 or 4 large fresh tomatoes (about 1 1/2 to 2 pounds)
- 2 tbsp olive oil
- 1 tbsp butter
- 1 cup chopped onion
- 1 chopped garlic clove
- 2 fresh jalapenos, seeded and diced
- 1 serrano or hot yellow chile, seeded and diced
- 1/3 cup fresh lime juice
- 1/2 cup chicken stock
- 1/2 tsp salt
- a few twists ground pepper
- 1/4 tsp hot pepper sauce
- 1/4 tsp chili powder
- 1 tbsp chopped cilantro

Step 1
1. Place washed tomatoes in broiler pan set on rack 5 to 6 inches from heat and broil 5 minutes. Turn over and broil another 2 to 3 minutes. Remove, cool slightly, core, peel and place in food processor.
2. Use a large skilled to combine olive oil and butter; saute onion and garlic until soft. Transfer to process and puree with tomatoes. Return to skilled. Add the diced chiles (about 1/4 cup in total), lime juice, chicken stock and rest of ingredients. Bring to a boil, reduce heat and simmer 30 minutes. Keep refrigerated.
3. Makes 4 cups.
