  • 1/2 TSP SALT
  • 3 TSP CINNAMON
  • 1 TSP CLOVES
  • 2 CUPS PEELED AND GRATED CARROTS
  • 1 CUP CHOPPED WALNUTS
  • 1 CAN CRUSHED PINEAPPLE
  • 2 PKG CREAM CHEESE,SOFTENED
  • 1 CUP ICING SUGAR
  • 1 TSP VANILLA
  • 3/4 CUP COCONUT

Step 1

BEAT OIL,SUGAR AND EGGS UNTIL WELL BLENDED.
IN A BOWL SIFT FLOUR,BAKING SODA,SALT,CINNAMON AND CLOVES;ADD TO EGG MIXTURE MIXING WELL.
DRAIN THE PINEAPPLE WELL. ADD CARROTS,WALNUTS AND PINEAPPLE TO MIXTURE;BLEND TO MIX WELL.
POUR BATTER INTO GREASED AND FLOURED 9" OR 10" CAKE PAN.
BAKE AT 350 FOR 1 HR OR UNTIL TOOTHPICK INSERTED IN CENTER COMES OUT CLEAN
LET CAKE COOL ON RACK.
PREPARE FROSTING BY CREAMING TOGETHER THE SOFTENED CREAM CHEESE,ICING SUGAR AND VANILLA UNTIL WELL BLENDED.
SPLIT CAKE INTO 2 LAYERS.ASSEMBLE.COVER WITH FROSTING AND SPRINKLE WITH COCONUT
