Slow Cooker Chicken & Sweet Potato Stew

Ingredients

  • 4 boneless skinless chicken breasts (about 2 lbs), cut into bite-sized pieces
  • 2 medium sweet potatoes, peeled and cubed
  • 2 medium Yukon Gold potatoes, peeled and cubed
  • 2 medium carrots, peeled and cut into 1/2" pieces
  • 1 can (28 oz) whole stewed tomatoes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp paprika
  • 1 tsp celery seed
  • 1 cup chicken stock
  • 1/4 cup chopped fresh basil

Preparation

Step 1

1. Combine chicken, potatoes, carrots, tomatoes, salt, pepper, cinnamon, nutmeg, paprika, celery seed and stock in slow cooker.

2. Cover and cook on low for 6-8 hours, or high for 3-4 hours, or until done.

3. Sprinkle with basil just before serving.
