Roasted Asparagus and Shiitake Mushrooms

  • Combine on a foil lined baking sheet:
  • Preheat oven to 425oF
  • 1 tbsp EVOO
  • 1/2 tsp freshly ground black pepper
  • 12 oz trimmed asparagus
  • 4 oz sliced shiitake or cremini mushroom caps



Step 1

Bake at 425oF for 10 minutes or until the asparagus is crisp-tender. Drizzle with 1 ½ tsp low sodium soy sauce.
