Rice Stuffed Cornish Hens

Ingredients
- 3/4 c chopped onions
- 1/2 c butter, divided
- 1/3 c chopped walnut
- 3/4 T lemon juice
- 1/2 t salt
- 3/4 c chopped celery
- 3 c. c cooked rice
- 4 T honey
- 3/4 t ground cinnamon
- 1/8 t pepper
- 6 Cornish hens

Preparation
Step 1
Saute onions and celery in 3 T butter until tender. Remove from heat, add rice, walnuts, honey, lemon juice, cinnamon, salt, pepper. Mix. Stuff hens. Place on rack. Soften butter and rub over skins. Bake uncovered 350 degrees for 1 hour or until juice runs clear.
