Sweet Potato Pancakes

Ingredients
- 1 c white whole wheat flour
- 2 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 tsp salt
- 1 large egg
- 1 1/4 c milk
- 1 TBSP brown sugar
- 1 TBSP vegetable oil
- 1 c sweet potato puree

Preparation
Step 1
1. In a bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
2. In a separate bowl, whisk together the remaining ingredients.
3. Gradually add the dry ingredient to the wet ingredients and stir until just combined.
4. Heat a large skillet or griddle over medium heat and lightly coat with butter or oil.
5. Pour about 1 TBSP of the batter onto the griddle, making as many pancakes as will fit and cook for 2 minutes,
6. Flip and cook for 1 minute longer.
7. To freeze I put them on a cookie sheet and put them in the freezer to harden up. Then I put them in a Ziploc bag.
