Pumpkin Bread

The organization I work for sells these loaves at a festival as a fundraiser. It is a good, solid recipe for pumpkin bread.

Ingredients
- 1 C sugar
- 1 1/2 C flour
- 2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 C cooked pumpkin (Libby's suggested)
- 3/4 C oil
- 2 large eggs
- 1 small pkg. (3.4 oz.) coconut cream pudding (use vanilla if coconut can't be found)

Preparation
Step 1
1. Mix flour, sugar, salt, nutmeg, cinnamon and soda. Set aside.
2. Mix together pumpkin, oil, eggs then add pudding and blend well. then add the dry ingredients.
3. Pour into pans making sure batter is distributed evenly. Bake at 350 for approx. 40-50 min.
