Ultimate Corn Bread Muffins

You can bake these in a muffin pan or in a 9" square pan...they are awesome!

Ingredients

  • 2 cups cornbread mix (I use Martha White)
  • 2 Tbls sugar
  • 1/2 tsp salt
  • 1 cup milk
  • 1/4 cup oil
  • 2 eggs
  • 4 oz shredded cheddar
  • small can creamed corn
  • 1/4 cup jalepeno peppers, chopped, or 1 small can diced green chilies

Preparation

Step 1

Heat oven to 400F. Grease muffin cups or 9" square pan

Stir cornbread mix, sugar, salt, milk, oil, and eggs in medium bowl just until moist. Gently stir in remaining ingredients. Pour into pan.

Bake 28-32 minutes, or until golden.
