Ingredients
- 10 bacon strips, diced
- 1 lb sliced fresh mushrooms
- 1 med onion, chopped
- 3 garlic cloves, minced
- 1 qt heavy whipping cream
- 1-14 oz can chicken broth
- 1 pkg shredded swiss cheese
- 3 tbs cornstarch
- 1/2 tsp salt
- 1/2 tsp pepper
- 3 tbs water

Preparation
Step 1
In soup kettle cook bacon over med heat until crisp. Using slotted spoon move to paper towel. drain, reserving 2 tbs drippings, saute mushrooms, onion, and garlic. Stir in cream and broth. Gradually stir in cheese until melted. In small bowl, combine cornstarch, salt, pepper and water until smooth. Stir in to soup. Bring to boil, cook and stir for 2 mins or until thickened. Garnish with bacon.
