  • 1 1 to 1 1/4 pound acorn squash
  • 2 Tbsp (packed) golden brown sugar
  • 1/8 tsp ground cinnamon
  • 1/8 tsp ground all spice
  • 2 Tbsp butter, melted
  • 2 Tbsp dark rum

Preparation

Step 1

1. Preheat oven to 400F. butter 13X9X2 inch glass baking dish. Cut top and bottom off squash. Scoop out and discard seeds. Cut squash crosswise into ½ inch thick rings. Arrange in prepared dish, overlapping slightly if necessary. Mix sugar and spices in small bowl. Sprinkle over squash. Drizzle with butter and rum.
2. Cover dish with foil. Bake 30 minutes. Turn squash over, cover and bake until squash is very tender, about 15 minutes. Transfer squash to platter. Drizzle with any pan juices and serve. .
