Ingredients

  • 1 1/4 lb pork loin, sliced
  • 2 T Paprika
  • 1 1 tsp cumin
  • 1/2 tsp ginger
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 1 large onion chopped
  • 1 qt lo salt chicken broth
  • 2/3 C apricot spreadable fruit
  • 2 T vinegar
  • 1 T cornstarch + 1/4 C water
  • 2 15 oz cans chickpeas
  • 1 C dried apricots, halved
  • 1 C each frozen green beans and carrots
  • 1 C water

Preparation

Step 1

-Place pork in large pot
- Mix nex 5 spices together and sprinkle over pork, stirring to coat - use just enough spice mixture until evenly coated- may have some left over
- Sprinkle with slat and pepper if desired
- Add broth, spreadable fruit, and vinegar and bring to boil; reduce heat and simmer,covered until tender - about 2 1/2 hours. May also place in oven at 300 degrees or put everything in a crockpot and cook all day
- Whisk together cornstarch and water and add along with chickpeas, apricots and frozen vegetables. Simmeer gently 15-20 min until veggies done and slightly thickened. May add the additional 1 cup water if you like it soupier.
