Ingredients
- 1 TBS butter
- 1 small shallot, chopped
- 2 cups fresh corn kernels (about 3 large ears)
- Kosher salt (to taste)
- Black pepper (to taste)
- 1/3 cup chopped assorted fresh herbs (e.g., basil, cilantro, chives, parsley)
- 1 TBS chopped fresh dill
- 1 TBS chopped fresh tarragon

Preparation
Step 1
1. Melt butter in heavy skillet over medium heat. Add shallot, and sauté until shallot is golden brown, about 4 minutes. Add corn kernels, salt, and pepper. Saute until corn is tender, about 5 minutes.
2. Remove from heat and mix in all herbs. Season to taste with salt & pepper. Transfer corn to bowl and serve.
Makes 2 servings. Each serving = 6 Weight Watchers points.
