- 8 carrots (about 4 c.), peeled and sliced into rounds
- 4 strips bacon
- 1 med. onion, finely chopped
- Salt & Pepper to taste
- 1/3 c. brown sugar
- 5 T. melted butter
Cook the carrots in boiling water until tender, Drain. Preheat oven to 400.
Fry bacon crisp and remove from pan. Reserve drippings. Saute onion in drippings. Crumble the bacon and put in 2-qt. buttered baking dish. Add carrots & onion and mix together. Add salt and pepper. Sprinkle with brown sugar and pour melted butter over this. Bake about 30 min.
