Ingredients
- 2-8oz packages gluten free pasta
- 2 Tbsp canola oil
- 3-4 Skinless, boneless chicken breasts, cut into 1-inch pieces
- 1 Cup frozen pea pods, cut into pieces
- 1/2 Tsp garlic salt
- 1/2 Cup grated parmesan cheese
- 1/4 Cup lemon juice
- 2 Tbsp chopped fresh parsley (optional)

Preparation
Step 1
1. In a large pot, cook pasta as directed on package. Drain and pour pasta into a large bowl. Cover with foil and set aside.
2. In a large skillet, heat oil on medium heat. Add chicken and cook about 6 minutes or until tender. Transfer cooked chicken to bowl with pasta.
3. In the same skillet, add pea pods and garlic salt. Cook and stir for 1 minute. Transfer to bowl with chicken and pasta. Add 1/2 cup grated cheese, lemon juice, and, if desired, parsley; toss to combine. Sprinkle with additional parmesan cheese. Serve immediately.
