Green Beans with Almonds and Carmelized Shallots

Ingredients
- 1/4 cup blanched slivered almonds
- 3 Tb margarine
- 5 shallots, thinly sliced
- 1 red pepper, chopped
- 2 Tb sugar
- 1 1/2 lbs fresh green beans, trimmed and snapped
- salt and pepper to taste

Preparation
Step 1
Place the slivered almonds in a dry skillet over low heat and cook and stir constantly until the almonds are lightly toasted, 3-5 minutes.
Heat margarine in a skillet over medium-low heat.
Cook and stir the shallots and red pepper until softened, about 8 minutes.
Sprinkle the shallot mixture with sugar, salt and pepper and reduce the heat to low.
Cover and cook slowly, stirring, until the sugar dissoves and the shallots carmelize, 5-8 minutes.
Steam green beans until tender, 7-8 minutes.
Drain the beans and place them in the skillet with the shallot mixture.
Stir in the almonds.
