Wilted Spinach Salad with warm bacon dressing

Quick, easy and delicious. This recipe is for the microwave.
Ingredients
- 1 lb package fresh spinach
- 6 slices bacon
- 1/2 cup green onions, chopped
- 1 lb fresh mushrooms, washed, drained, and halved
- 4 Tbls wine vinegar
- 2 Tbls lemon juice
- 2 tsp sugar
- 1 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp mustard

Preparation
Step 1
Wash spinach. Drain and dry with paper towels and set aside.
In small casserole, microwave bacon on High 6 minutes, until crisp. Remove bacon from dish and set aside. Add green onions to dish and microwave on High 2-3 minutes.
In 3 qt dish, put bacon drippings and onions. Add mushrooms. Microwave on High 5 minutes, until partly sauteed.
Combine wine vinegar, lemon juice, sugar, salt, black pepper, and mustard. Add crumbled bacon bits. Add this mixture to the mushrooms in the 3 qt dish. Microwave on High 3 minutes.
Place spinach in large salad bowl. Pour hot mixture over spinach and mix until wilted. Serve hot.
Note: For variety add shredded parmesan cheese and 2 hard-cooked eggs, chopped.
