Ingredients

  • Blueberry Sauce
  • 1 1/2 cups blueberries
  • 1/3 cup sugar
  • 1 Tbsp. cornstarch
  • 1/2 cup water
  • Cookies batter
  • 1/3 cup oil
  • 1/4 cup butter, softened
  • 2 cups sugar
  • 4 large eggs
  • 2 tsp vanilla
  • 3 cups flour
  • 1/4 tsp baking soda
  • Icing
  • 1/2 cup confectioners sugar
  • Finely grated zest of 1 lemon
  • Lemon juice

Step 1

Preheat oven to 350 degrees F and grease 9x13 baking dish
Prepare Blueberry Sauce: Combine sugar and cornstarch in small saucepan. Take 1/2 cup of the blueberries and crush with a fork. Add to the saucepan with 1/2 cup of water. Stir. Bring to a boil and cook until sauce is thickened and translucent. Remove from heat and add remaining 1 cup of blueberries. Allow to cool at room temperature.
In a large bowl, cream together oil, butter and sugar. Add eggs and vanilla and beat well. Add the flour and baking soda and stir just until the batter comes together.
Spread 2/3 of the batter in the bottom of the pan. Pour Blueberry sauce , then drop the remaining dough in spoonfuls over the fruit.
Bake for 30-40 minutes, until golden and springy to the touch. Let cool.
To make the icing, mix together icing sugar and lemon zest, then gradually add lemon juice until you have a smooth, slightly runny icing, adding more juice, if needed. Drizzle over cookie bars.
Once cooled, cut into bars.
