Mustard -Parmesan Whole Roasted Cauliflower

Ingredients

  • 1 extra large or 2 large whole cauliflowers
  • 2 tsp garlic paste
  • 1/4 cup extra virgin olive oil
  • 4 tbsp Dijon mustard or whole grain mustard
  • 1 tsp kosher salt
  • table grind black pepper to taste
  • 2 tbsp fresh parsley, roughly chopped
  • 1/4 cup Parmesan cheese

Preparation

Step 1

1.Position an oven rack in the bottom of the oven.Preheat oven to 450.Line a baking sheet with foil.
2.Remove the leaves from the cauliflower, then trim the stem flush with the bottom of the head so the cauliflower sits flat on a prepared baking sheet. Rub the outside of the cauliflower with garlic paste
3.Whisk together the olive oil, 3 tbsp mustard, salt and table grind pepper to taste in a small bowl.
4.Put the cauliflower on a prepared baking sheet and brush the entire outside with the mustard-oil mixture.Roast the cauliflower until nicely charred and tender( a long skewer inserted in the center of the cauliflower should pass through easily, about 1 hour.Let rest for a few minutes.
5.Meanwhile combine parsley and parmesan in a small bowl. Brush the roasted cauliflower head all over the outside with the remaining 1 tbsp mustard and generously sprinkle with the parmesan-herb mixture.
6. Cut the cauliflower into thick wedges and serve
