Sweet Potato casserole

Ingredients

  • 3-4 large sweet potatoes
  • 1 stick butter
  • 2 large or 3 medium eggs
  • 1 small can of evaporated mile
  • 2/3 cup sugar use 1 cup of sugar if you like them sweeter
  • 2 Teaspoon Vanilla extract
  • 1 teaspoon Nutmeg
  • 1 Tablespoon cinnamon
  • marshmallows

Preparation

Step 1

Boil the sweet potatoes until soft. Drain and let cool enough to peel. Peel and put in a bowl with a stick of butter, Mash up as much as possible. Add eggs, sugar, evaporated milk, Mix with electric mixer until smooth. Add vanilla, cinnamon, and nutmeg.
Spray casserole with cooking spray, pour in mixture, bake 350 degrees F, for 45 minutes, remove from heat. Top with marshmallows and bake until marshmallows are browned.

** You can substitute canned yams (2 large cans) and use the juice in the can and skip the evaporated milk
