Lazarus Broccoli Soup


Soup is best if made the day before

  • 1 lb. brocolli
  • 8 oz. butter (1/2 lb.)
  • 1 cup shifted flour
  • 1 gt. chicken stock
  • 1 gt. half-half
  • 1 teas.salt
  • 1/4 teas. white pepper
  • mushrooms-optional
  • 1/4 cup cheddar cheese



Step 1

Clean broccoli and cut into 1/2 inch pieces, steam until tender, in 1/2 cup of water, do not drain. Melt butter over medium heat add flour to make a roux, cook 2-4 minutes, gradually add chicken stock whisking constantly and bring to a boil, turn heat to low add broccoli, half-half, salt and pepper and heat. DO NOY BOIL. add cheese and melt when ready to serve or add cheese on trop of soup in serving bowl.
