- 1 1/2 lbs Carrots
- 2 1/2 Tablespoons fresh lemon juice
- 2 1/2 Tablespoons extra-virgin olive oil
- 3/4 teaspoon kosher salt,
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- Large pinch cinnamon
- large pinch cayenne.
- frseh flat-leaf parsley leaves

Step 1
Peel the carrots and shave into ribbons with a vegetable peeler. Toss with lemon juice and olive oil, kosher salt, cumin and coriander, cayenne, cinnamon. Top with chopped fresh flat=leaf parsley leaves.
