Moroccan Carrot Salad

Ingredients

  • 1 1/2 lbs Carrots
  • 2 1/2 Tablespoons fresh lemon juice
  • 2 1/2 Tablespoons extra-virgin olive oil
  • 3/4 teaspoon kosher salt,
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Large pinch cinnamon
  • large pinch cayenne.
  • frseh flat-leaf parsley leaves

Preparation

Step 1

Peel the carrots and shave into ribbons with a vegetable peeler. Toss with lemon juice and olive oil, kosher salt, cumin and coriander, cayenne, cinnamon. Top with chopped fresh flat=leaf parsley leaves.
