Apple Glazed Roast Chicken

Ingredients
- 1 cup Cider Vinegar
- 1 cup Apple Jelly
- 1 tsp Apple Pie Spice
- 1 Chicken, whole
- 6 small baking Apples, cored and quartered
- 1 package (6oz) Long Grain and Wild Rice Mix
- 2 1/4 cups Water
- 1 Tbsp Butter
- 1/2 tsp Black Pepper
- 2 reen Onions, thinly sliced

Step 1
In a saucepan, stir together vinegar and jelly over medium heat bring to a boil; gently boil uncovered for 20 minutes, until syrupy, should reduce to about 1 cup. Remove from heat and stir in apples.
Skewer the neck and skin of the chicken to back; tie legs to tail. Twist wing tips under back. Place chicken, breast side up, on rack in roasting pan. Sprinkle with salt; roast uncovered for 1 1/4 hours in 325 degree oven.
Meanwhile, in a casserole dish combine rice and seasoning mix, water and butter; cover and set aside.
After 1 1/4 hours, place apples around chicken and brush with apple glaze. Sprinkle chicken with pepper. Roast chicken and rice together in oven 1-1 1/4 hours more or until instant read thermometer reads 180 degrees. Serve chicken over rice.
