I like to put bananas in my pumpkin bread. Tastes great!

Ingredients

  • 3 1/2 c flour
  • 2 1/2 c sugar
  • 1/2 tsp nutmeg
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 4 eggs
  • 29 oz can pumpkin (NOT pie filling)
  • 3/4 c vegetable oil
  • 3-4 mashed, ripe bananas (optional)

Preparation

Step 1

Preheat oven to 350. In a large bowl, beat eggs and add pumpkin, oil and bananas. In smaller bowl, mix flour, sugar, salt, soda, baking powder and spices. Add dry into wet and mix. Pour into 3 greased loaf pans or 6 mini loaf pans, and bake for 50 to 60 minutes, less for mini pans. Check doneness by inserting a toothpick into the center to see that it comes out clean.
