beef flat iron steak or boneless top sirloin steak (¾ pound)
tablespoons butter, softened, divided
teaspoon minced fresh parsley
teaspoon minced garlic
teaspoon soy sauce
Sprinkle steak with salt and pepper. In a large skillet, cook steak in 1 tablespoon butter over medium-high heat for 4-6 minutes on each side or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145°; medium, 160°; well-done, 170°). Let stand for 5 minutes before slicing. In a small bowl, combine the parsley, garlic, soy sauce and remaining butter. Serve with steak.
