Ingredients
- 3 large eggs, beaten
- 2 cups granulated sugar
- 1 1/4 cups lime-flavored extra-virgin olive oil
- 1 1/4 cups milk
- 4 tablespoons lime juice
- 3 teaspoons lime zest
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt

Step 1
Preheat oven to 350 degrees. Grease a 10-inch cake pan. In a large mixing bowl, whisk eggs, sugar, olive oil, milk, lime juice and zest. Place flour, baking soda, baking powder and salt in a sifter. Sift well. Slowly mix the dry ingredients into the wet mixture. Continue whisking until blended. Pour into the prepared pan. Bake for 60 minutes.
Makes 6 servings.
