Ingredients

  • 2 eggs
  • 1 3/4 cups sugar
  • 1 cup buttermilk
  • 1/2 cup oil
  • 1 tsp vanilla
  • 4 tbs baking cocoa
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 1/2 cups flour
  • 1 small pkg instant vanilla pudding mix
  • 2 cups grated zucchini
  • 1 cup chocolate chips
  • 1/2 cup chopped nuts

Preparation

Step 1

Cream eggs, sugar, buttermilk, oil, and vanilla together. Sift dry ingredients together and add to creamed mixture. Add pudding mix and zucchini, mixing well. Pour batter into greased and floured 9 x 13 cake pan. Sprinkle top of batter with chocolate chips and nuts. Bake for 40-45 minutes at 325 degrees.

Serve with whipped topping.
