- 4-5 Medium Sweet Potatoes
- 1 Egg, slightly beaten
- 1 Cup Pineapple or orange Juice
- 1/4 Cup Butter or Margarine
- 1 tsp. Salt
- 1/4 tsp. Cinnamon
- 8 Marshmallows

Step 1
Pare sweet potatoes, cut into large chunks. Cook, covered, in pineapple juice about 20 minutes or until tender. Drain, reserving juice. Preheat oven to 350 degrees. Mash well, add butter, egg, salt, cinnamon and about 1/3 cup reserved juice. With spoon or electric mixer beat until creamy; spoon into an 8" round baking dish. Lightly press marshmallows into top. Bake uncovered for 30 minutes or until marshmallows are golden brown.
