- 2 lemons, divided
- 1 2 1/2 in piece fresh ginger root (about 2 oz), peeled
- 1/4 c sugar
- 1 12-oz can frozen lemonade concentrate
- 4 c chilled club soda
- 1 c lemon-flavored vodka (optional)
- 1/2 c lemon sorbet
Zest lemons and cut in half crosswise.
Cut two thin slices from one leman.
Cut slices into quarters and cut one slit into each quarter; set aside for garnish.
Juice remaining lemons to measure 1/3 c juice.
Finely mince ginger root and combine lemon zest, juice, ginger and sugar and cover loosely with lid.
Microwave on high for 2-3 minutes or until sugar is dissolved.
Place lemonade concentrate into pitcher and pour ginger mixture through strainer into pitcher; discard ginger.
Add club soda and vodka, if desired.
To serve, scoop sorbet into glasses and pour beverage over sorbet.
Garnish glasses with lemon quarters. Yields 8 servings.
