Zucchini Bread or Cake
- 3 eggs
- 2 c sugar
- 1 c oil
- 1 Tbsp vanilla
- 2 c flour
- 1 Tbsp cinnamon
- 2 tsp soda
- 1 tsp salt
- 1/4 tsp baking powder
- 2 c loosely packed, coarsely shredded zucchini
- 1 c chopped walnuts
Beat eggs, sugar, oil, and vanilla until think and frothy.
Sift together flour, cinnamon, soda, salt, and baking powder.
Pour into 2 greased and floured loaf pans or 1 9x13x2 in cake pan.
Bake in a 350 degree oven for one hour or until toothpick inserted comes out clean.
As a cake, frost when cool with a cream cheese frosting.
