Tbs olive oil
g grated Gruyere cheese (or substitute for cheddar if necessary)
Tbs chopped fresh basil
salt and pepper to taste
Peel potatoes and slice thinly with mandolin. Place in a bowl of cold water and cover. Allow to stand for 10 minutes. Drain. Peel and slice onions. Heat oil in frying pan and add onions. Saute until softened then add potatoes and cook for 15 - 20 minutes turning frequently until tender and golden brown. Add basil to pan and sprinkle cheese over top. Cook for 2 mins without stirring, until cheese melts. Season and serve.
