Ingredients

  • 2 pounds potatoes -- (about 3 large)
  • 1/4 cup butter -- (1/2 stick)
  • 1 small onion -- finely chopped
  • 2 tablespoons all purpose flour
  • 2 cups milk
  • 1 cup grated cheddar cheese
  • 1 teaspoon salt
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon ground black pepper
  • 1 dash hot pepper sauce
  • 1 green onion -- sliced

Preparation

Step 1

Simmer potatoes in water until just barely tender, about 30 minutes.
Drain and cool slightly and remove skins. Cut into 1/4 inch cubes. Set
aside.

Heat oven to 350 degrees. Melt butter in medium skillet. Add chopped
onion; cook until tender, about 5 minutes. Whisk in flour. Add about 1
cup of the milk; cook, whisking constantly until thickened and smooth.
Add remaining milk, 2/3 cup cheese, salt, Worcestershire, pepper and hot
pepper sauce. Cook, stirring until smooth.

Put potatoes into greased casserole dish. Pour sauce over potatoes; stir
gently to mix. Top with remaining cheese and sliced green onion. Bake
until heated through and lightly browned, about 30 minutes.
