Moroccan Cauliflower with Yogurt Dressing

Ingredients

  • 1 whole cauliflower cut into florets
  • EVOO
  • 2 cloves garlic, minced
  • Pinch of Chili Powder
  • S&P
  • Grated Parmesan
  • 2 tbs. Panko breadcrumbs
  • 6 oz.Greek Yogurt
  • 2 tsps lemon juice
  • Pinch Harissa rub
  • 4 tbs chopped pistachios

Preparation

Step 1

Preheat oven to 450. Toss cauliflower florets with olive oil, s&p, chili powder and garlic. Bake for about 25 minutes, turning halfway thru. Remove cauliflower from ove and sprinkle with
Panko and grated parmesan and broil until brown on top.
Meanwhile, mix yogurt with lemon juice, Harissa rub, a tsp olive oil and a pinch of salt and whisk together. Spoon yogurt mixture onto plate, sprinkle chopped pistachios on top of yogurt mixture and put the cauliflower on top of yogurt bed to serve.
