- 1 1/2 lb fillet, cut into medallions
- 1 cup dark (red) miso
- 1 Tbsp minced ginger
- 1/2 tsp cayenne
- Mirin or sake as needed

Preparation
Step 1
1. Combine the miso, ginger, and cayenne in a large bowl, and then thin with a bit of mirin or sake (or water) until the mixture is pasty.
2. Spread the paste on the meat, and then move on to step 2 or cover and refrigerate for up to a day.
3. Start a charcoal fire, light a gas grill, or preheat a broiler or oven; the rack should be 4 inches or less from the heat source.
4. Grill, broil, or roast the meat for about 2 to 4 minutes per side, until the outside is crisp and the inside is medium-rare. Serve immediately over a bed of mixed greens.
