Ingredients

  • 8 Roma tomatoes (1.5 to 2 lbs)
  • 1 t salt
  • 1 clove garlic minced
  • 1 T minced fresh basil
  • 2 T minced fresh Italian Parsley
  • 1/4 cup EVOO
  • pepper
  • 24 slices baquette

Preparation

Step 1

1. Pulse tomatoes in food proc. until finely chopped

2. Transfer tomatoes to strainer and sprinkle with salt. Drain for 1 hr.

3. Preheat 375. Combine tomatoes with the garlic,basil and parsley.

4. Gradually whisk in EVOO, season with S & P and set aside.

5. Toast bread for about 10 minutes till crisp and golden.
