Fettuccine with Cranberry Macadamia Nut Pesto

Ingredients

  • 12 cups fresh basil leaves
  • 12 garlic cloves
  • 4 1/2 cups macadamia nuts
  • 3 cups olive oil
  • 1 1/2 cups grated Parmesan cheese
  • 2 teaspoons salt
  • 1/2 teaspoon white pepper
  • 3 2/3 cups Ocean Spray® Craisins® Dried Cranberries
  • 6 pounds fettuccine, cooked al dente

Preparation

Step 1

1. Combine basil, garlic and nuts in a large food processor. Process until almost smooth.

2. Drizzle in olive oil through feed tube while motor is running.

3. Add cheese, salt and pepper; process to combine. Transfer to a medium mixing bowl. Stir in dried cranberries. Adjust seasonings to taste.

4. Serve 1 3/4 cups fettuccine tossed with about 1/2 cup pesto.
