Saucy Turkey and Couscous

  • 1 lb. lean ground turkey
  • 1 T. mustard
  • 2 T. Parsley flakes
  • 2 T. olive oil
  • 1/2 a bell pepper, diced
  • 1 can petite diced tomatoes
  • 1 can peas, drained
  • 1 can sliced carrots, drained
  • 1/4 t. salt
  • 1/4 t. pepper
  • 3/4 t. creole seasoning
  • 1/4 t. ancho chili seasoning
  • 1 box of couscous
  • Fried onion straws for garnish

Cooking time 40mins


Step 1

Brown ground turkey in a large skillet. Add olive oil and diced green pepper; cook a few minutes to soften peppers. Add tomatoes, peas, carrots and seasonings. Bring to a boil and simmer for 10 minutes. While simmering, prepare couscous according to package directions. Serve couscous topped with turkey mixture and garnished with fried onion straws.
