Beef and black bean chili


To crank up the heat add chopped chipotle peppers in adobe sauce

  • 3 t olive oil dvided
  • 2 pounds ground sirloin
  • 1 t coarse salt
  • 1 large yellow onion chopped
  • 3 garlic cloves minced
  • 1 T chili powder
  • 1 T ground cumin
  • 1 t dried oregano
  • 1/2 t cinnamon
  • 1 1/2 c chicken broth
  • 1 c water
  • 1 28 ounce can crushed tomatoes undrained
  • 2 T tomato paste
  • 2 T honey
  • 1 15 oz can black beans rinsed and drained
  • 1 T fresh lime juice
  • optional toppings
  • shredded cheddar, diced avocado, chopped scallions



Step 1

heat 1 t oil in Dutch oven over med heat
add beef and saute breaking up meat with a wooden spoon until no pink remains
using a slotted spoon transfer meat to a bowl-sprinkle w salt and pepper and set aside
drain liquied from pot and add remaining 2 t oil-add onion and saute till soft but no browned about 5 mins-add garlic and saute 1 min-stir in chili powder, cumin, oregano and cinnamon and cook 1 min
add chicken broth, water, beef, crushed tomatoes, tomato paste and honey
Reduce heat to med low and simmer 1 hour stirring occasionally
add beans and lime juice and cook 5 minutes-serve with topping
