Pear, Date and Manchego Salad

Step 1

arrange 1 cup gourment salad greens on each of four plates. Finely chop 2 ripe Bosc pears; toss with 2 tsp lemon juice. Divide pear, 6 finely chopped pitted dates and 2 T chopped toasted hazelnuts evenly among salads. Combine 1.5 T EVOO, 2 tsp sherry vinegar, 1/4 tsp salt, 1/8 tsp black pepper; whisk. Drizzle over salad. top each salad with shaved Manchego cheese.
