Ingredients

  • 4 T olive oil
  • 1 lb. small red potatoes, cut 1/2 cubes
  • 1/3 c each chopped red onion, celery
  • and carrot
  • 1 can chicken broth
  • 3/4 c heavy cream
  • 1 btl clam juice
  • 1 T rosemary
  • 1 1/2 t ground cumin
  • 1 t salt
  • 1/4 t pepper
  • 8 oz. shrimp
  • 8 oz. monkfish
  • 2 c corn
  • 1/4 c chopped parsley

Preparation

Step 1

Heat 2 T oil, add potatoes, cook until browned. Add onion, celery, and carrot. Cook until tender. Add next 7 ingredients; bring to boil. Simmer @ 30 mins. Heat 1 T oil; add shrimp, cook. Repeat with monkfish. Add fish and corn to chowder; cook until corn is tender. Sprinkle with parsley
