Sopa de Pollo Boricua

This Puerto Rican dish is a twist on the classic chicken noodle soup. This is perfect for those chilly days curled up on the couch.

Ingredients
- 10 cups water
- 2 chicken breasts, 3 chicken thighs with some of the skin removed (seasoned with Adobo Goya, oregano and cumin to your taste), cut in cubes
- 1 chicken bouillon cube or packet
- 1 teaspoon Goya sazon seasoning
- 4 garlic cloves, cubed
- 4 to 5 sprigs cilantro, chopped
- 1/2 cup sofrito
- 1 tsp oregano
- 2 potatoes, cubes
- 3 to 4 carrots, peeled and sliced
- 1 cup fine soup noodles

Step 1
In a large pot add water, chicken, bouillon, sazon, carrots, garlic, cilantro, sofrito and oregano for 30 minutes.
Add potatoes and carrots. Cook until potatoes and carrots are done.
Add noodles and cook another 5 minutes. Serve.
