Grape Tomato Couscous

Ingredients
- 1 cup whole wheat couscous, prepared according to package directions, using olive oil
- 1 generous handful grape tomatoes, halved (if they're especially large, you can quarter them)
- 1 2-inch square hunk of hard provolone cheese, shredded (you could use any italian cheese: parmesan, romano, smoked mozzarella)
- 1 generous handful basil leaves, cut into thin ribbons
- 2 Tbs extra-virgin olive oil
- 1 Tbs white balsamic vinegar
- salt and pepper to taste

Preparation
Step 1
Let couscous stand at room temperature for 10-15 minutes. In a large bowl, combine couscous, tomatoes, cheese, and basil. In a small bowl, whisk oil, vinegar, salt, and pepper until emulsified. Quickly pour over ingredients in large bowl, and toss with a large spoon to combine. Taste it—you can always double the dressing recipe if you want a stronger flavor.
